Built in 1883, Normanby Chambers was originally home
to barristers who, sentimental with thoughts of London, based themselves
in the area of Little Collins Street that was then known as Chancery
Lane. Today, the ground floor of this impressive, recently redeveloped
building is home to Shannon Bennett's award winning fine dining.
Many of the much loved elements from Vue de monde’s original location in Carlton have been not only retained but further developed. The open kitchen has been extended to maximise the view for the dining room complete with cooking class style mirrors. For those intent on having the full ‘vue’ a Chef’s Table for six is located (literally!) in the kitchen.
The ambience at Vue de monde is one of understated luxury. Rich, warm colours are highlighted by Spanish pendant lighting, velvet curtaining and bronze mirrors. Artwork provides a quirky element and a sense of the mischievous to the dining room.

The philosophy at Vue de monde is to provide a dining experience that cannot be created at home. This is achieved through dedication to the dining experience as a whole; from the sourcing of rare ingredients and an uncompromising approach to classical technique, to a commitment to the very best in restaurant service including crockery, cutlery and glassware.
Whilst taking its inspiration from recipes dating back hundreds of years, the menu at Vue de monde has evolved to encompass a modern interpretation. Where possible we use local ingredients which are sustainable and seek to develop relationships directly with growers and farmers. Our inspiration is driven by simple ingredients produced with care and passion as dictated by the seasons. We celebrate what is on our door step choosing beautiful, heirloom and organic produce and allowing it to shine and to stand proudly on its own.
Our focus is derived from the desire to evoke emotion and thought through simplicity and purity. To present a balanced and satisfying experience that is a gentle progression of flavors with a sense of theatre and a sense of fun.
The Menu Gourmand is a progression of small courses ranging from five courses to our Gastronome Menu of around nine courses. The dishes change every day depending on the availability of ingredients. Menus are discussed with each table on arrival at the restaurant and all dietary requirements are catered for. Once a menu structure is established, matching wines can be organised to go with each course by our sommelier. Alternatively our extensive wine list offers a large selection of wines by the bottle.
The wine list has its focus on the great wines of the old world celebrating a range of both iconic and boutique producers. Hand sourced wines from the new world add character and depth to the list.
